Adobo, the most controversial dish in the Philippines, can be cooked using chicken, pork or fish, and even string beans as main ingredients. The dish is cooked with vinegar and soy sauce, making it last for days.
Follow this easy recipe:
- 3 cloves garlic
- soy sauce
- whole black peppercorns
- bay leaves
- cooking oil
- sugar and salt (optional)
- Heat oil in a pan. Cook the chicken until all sides are lightly browned. Set aside.
- On a separate pot, sauté garlic until soft. Add the soy sauce, peppercorns and bay leaves. Put the chicken back in the pot. Simmer until chicken is tender.
- Add the vinegar. (Optional: you can add sugar to sweeten your adobo, water and salt according to your taste.) Cook for a few minutes. Stir.
- Serve hot.
