Dabawenya Scientist Developed a Healthy Beer!

Drink moderately! This is the statement that we usually hear after every liquor advertisement. Since we’ve known for a fact that too much consumption is not good for one’s health. But did you know that a dabawenya scientist developed a healthy liquor drink that has durian powder in it?

Kriza Faye Calumba is an Assistant Professor in the Department of Food Science and Chemistry at the University of the Philippines Mindanao and a certified beef lover. In 2017, she was one of the few who were given the Fullbright-CHED scholarship to study for 2 years at Louisiana State University in the United States.

With the help of research, she was able to make an “ale beer” with 4.39% alcohol content and probiotics immobilized by durian powder. According to Kriza, since probiotic bacteria can’t stay alive in a beer, hence they used powder from durian skin to protect them. It’s called a healthy beer because of the presence of probiotics which is good for gastrointestinal health.

Her research project won 3rd Place in Biotechnology Division Poster in Chicago Illinois and also in the International Food Technologist Inc. Annual Conference, “Never stop learning kay ang imong natun-an pwede nimo magamit aron makatabang sa uban (Never stop learning because from what you have learned, you can use it to help others).” She also encourage everyone to use every opportunity to make a contribution in achieving a healthier food system.
