Barquillos And Barquiron: Spanish-Inspired Ilonggo Snacks That Filipinos Love

Barquillos is an all-time Filipino favorite crunchy wafer roll. A Spanish invention, the crunchy rolled stick has many different versions around the world. However, locally, the Spanish-inspired snack has been a well-loved pasalubong by Filipinos.

Barquillos

Ingredients

  • 5 large egg yolks, lightly beaten
  • Half cup sugar, depends on your taste
  • ¾ cup milk (you can use fresh milk)
  • ¼ to 2/3 cup all-purpose flour, sifted
  • Lemon rind, finely crushed (or use 1 tsp vanilla)
  • Butter or cooking oil

Procedure

  • In a bowl, lightly beat the egg yolks.
  • Pour milk and stir.
  • Add the all-purpose flour and mix well.
  • Add sugar according to your desired amount and the vanilla.
  • Grease the barquillera with butter or cooking oil and prepare it to moderate heat.
  • Place about a tablespoon of batter in the barquillera. Press and heat on both sides until it turns to light brown.
  • Shape the soft batter while still hot using the handle of a wooden spoon or pin by rolling it. Don’t forget to grease the handle to prevent the barquillos from sticking.

When the barquillos is cooked and prepared, you can serve it already as a snack! Or, you can easily upgrade it to a barquiron!

Barquiron can simply be described as barquillos filled with polvoron.

Polvoron is a powdered milk candy. You can easily buy it in pasalubong stores or you can just simply make your own. Below is a simple recipe that you can follow.

Polvoron

Ingredients

  • 1 cup flour, sifted (you can use all-purpose flour)
  • ½ cup butter, you can add more depending on your mixture
  • ½ cup sugar, depending to your taste
  • ½ cup powdered milk, you can also add more and I suggest you use your preferred brand

Procedure

  • In a pan, toast the flour in medium heat until it turns light brown. Careful not to make the color darker.
  • Remove from heat and let it cool down.
  • Sift the toasted flour.
  • Add the powdered milk and sugar. Mix well.
  • In a separate pan, melt the butter. If it’s already melted, pour it on your powdered mixture. Mix well until there are no lumps.

For this portion, let’s skip molding the polvoron. Instead, we’ll use it to fill the barquillos. Gently fill it with polvoron. And…

Voila! Our barquiron is now ready!

You can pack the barquillos and share it with your friends or you can sell it for extra income.
