During ECQ, Make Your Mother's Day Better with this Tinapa and Egg Soufflé Recipe!

Without a doubt, Mother’s Day is the occasion to show your mom – biological or otherwise – how much she means to you. But really, how can you properly thank the woman who gave you the gift of life? Honoring them might look a bit different this year as we deal with the coronavirus pandemic.

However, there are many ways to be creative and show your love this Mother’s Day. You can perform simple act of kindness from your home. Why not give your mom a kitchen break and cook for her for a simple celebration at home.

Maayong Buntag Mindanao host and chef, Michelle Robin shared a simple recipe that you can make that will surely make your mom happy and proud using ingredients that are readily available: sardines and egg! “We can turn your ordinary dishes to something special without breaking our budget. You just have to be creative in doing some kitchen experiments,” said Chef Michelle.

Tinapa and Egg Soufflé

Ingredients:

3 eggs

1 can sardines

Carrots minced

¼ bulb onion

1 clover garlic

Salt

Pepper

Chili flakes

Procedure:

Separate sauce from sardines. Flake the sardines using fork. Set aside. Separate egg whites from Yolks. Eat egg yolks. Add a pinch of salt and pepper. Set aside. In a large bowl, whisk egg whites to incorporate air until soft peak. Gradually add the egg yolk mixture to the egg whites. Mix. Heat oil in pan. Add egg mixture. Cover pan to trap the moisture. Cook for 5-7 minutes under low heat. Add flaked sardines on top of the soufflé. Gently fold the egg into half. On a separate pan, sauté onion, garlic and carrots. Add the sardines sauce. Season with salt, pepper and chili flakes. Topped the sardines sauce on your egg soufflé. You can also add onion leaves as garnish.
