Surprise Tatay with this Ampalaya Dish on Father’s Day!

Ampalaya (Bitter Melon) is a remarkable health food. It is a vegetable grown throughout the Philippines. Bitter melons are seldom mixed with other vegetables due to the strong bitter taste, although this can be moderated to some extent by salting and then washing the cut melon before use. Aside from Ampalaya’s medicinal value, it is also a good source of vitamins A, B, C, iron, folic acid, phosphorous, and calcium. That’s why on their special day… why not surprise your father with a simple yet unique recipe made of Ampalaya?
“This Father’s Day, we want to prepare something healthy for the head of our family. Since bitter gourd (bitter melon) is a good source of Vitamin A that promotes proper vision. It is also rich in Vitamin C to boost our dad’s immune system,” shared Chef Michelle Robin to the online viewers of Maayong Buntag Mindanao’s cooking segment. She added, “Even the kids will enjoy this recipe since it is stuffed with ground beef and topped with cheese to subdue the bitter taste of the ampalaya.”
Cheesy Baked Ampalaya
500g ground beef
½ cup bread crumbs
1 bulb onion (minced)
3 cloves garlic (minced)
1 carrot (minced)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
½ tsp chili flakes
1 Pre-heat oven to 180c.
2 Mix the ground beef and other ingredients.
3. Stuff the ground beef mixture in the ampalaya.
4. Spread the baking pan with an oil.
5. Put the stuffed ampalaya in the baking pan. Put cheese on top.
6. Put in the oven and bake for 20-25 minutes or until the meat is cooked.
