Lechon or the slow-roasted suckling pig is undeniably the most popular dish in the Philippines. Name every Pinoy celebration – from fiestas to birthdays to weddings to noche buena, it’s always the menu centerpiece! The pig, typically stuffed with anything from lemongrass to tamarind to garlic to onions and chives, is roasted on a bamboo spit for hours over a fire of open coals. We crave that orange/red-brown crisp skin color. But, how about a black-skinned lechon? Will you still eat it?
