This is what a Davao City baker accomplished with her Malunggay Squash bread!

Ayanna Noelle Villanueva challenged herself to make her loaves of bread stand out. Nothing entered in her mind except the squash. Since it’s easy to find in the market, the taste also evolves when cooked into a jam, “We used to make squash jam as a spread for our bread when we were young. We just do the traditional way of making squash jam using only fresh and real ingredients,” shared Ayanna. Children who don’t want to eat squash can eat it without even noticing they are already eating squash because it tastes sweet. It is also a good source of Vitamin A that promotes good vision.
 


For the dough, Ayanna’s friend Mik suggested to incorporate Malunggay (Horseradish) leaves to have texture and color. The leaves have 7 times more Vitamin C than oranges. It is also packed with antioxidants that can protect cells from damage and may boost your immune system. “Our Malunggay (Horseradish) Squash Bread does not only taste good but it also has multiple health benefits in it. Many people do not want to consume vegetables in simple form but incorporating malunggay (horseradish) leaves and squash in a bread is creative way of transforming these vegetables into something that can satisfy our taste buds without neglecting nutrition,” shared Ayanna.
