Mango Ketchup? Mango Pizza? Only in the Philippines!

Guimaras is famously known for its sweet tasting mangoes that almost all of the island’s specialty and products are mangoes and mango-flavored.
And, there's also this fruity and tangy mango pizza at San Miguel, Jordan, Guimaras.
So what else can you do with mangoes? Use it as ketchup!
Mango ketchup is rich in vitamins. You can use it in your pasta sauces just like the banana ketchup in Filipino-style spaghetti, as a condiment or as an ingredient in your dishes to give it a tangy taste.
Rebecca Castro Tubongbanua, a famer scientist of Guimaras, shares the process on how to make the mango ketchup.
- cassava starch
- 900g refined sugar
- 700g vinegar
- 3.5L water
- 4 kilos mango puree
- iodized salt
- Mix all solid ingredients.
- Mix all liquid ingredients.
- Then mix both solid and liquid ingredients in a large pot.
- Add the mango puree.
- Blend the mixture and pasteurize at 90°C. Note: The heat should only be at a maximum of 90°C to preserve the vitamins.Remove from heat.
- Add ascorbic acid for antioxidant
The recipe can make 27 bottles. In Guimaras, a bottle is sold at Php32.
Mango Ketchup is also sold at selected grocery stores in some provinces but it already cost as much as Php75 per bottle. So don't forget, when in Guimaras, bring home a bottle of mango ketchup from Buenavista!

How to Get There
From Manila, you can fly to Iloilo (estimated cost of Php3,000++, round trip, one hour).
From Iloilo Airport, take a cab and ask to be taken to Parola which is the jump-off point for Jordan, Guimaras. From there you can board a motorboat (Php14++ per head) going to Jordan port. Upon arriving in Jordan port, proceed to the tourism center just a few meters from the drop-off point. You can ask for assistance getting around. There are also several mini-van and tricycle drivers who offer tour rides.
